Super Healthy/Easy/Delish Pumpkin Cookies


Never, ever too much pumpkin.  Every meal - lattes - dessert - ok a little extreme.  It's just amazing of course.

Pumpkin Oatmeal Cookies

This cookie recipe is super easy and is something I've kinda created myself.  The ingredients {except for the chocolate chips} are all healthy - so it's a guiltless dessert or snack.  Get your pumpkin fix.

One of the major ingredients is one banana.  It's easiest to begin with mashing it - the trick is a smooth texture.

Then simply mix the remaining ingredients well >> arrange on a cookie sheet and bake at 350.  That's it!

Pumpkin Oatmeal Cookies

 

Ingredients:

·      1 cup oats

·      1 mashed ripe banana

·      ¾ cup organic pumpkin puree

·      1 tbsp chia seeds

·      ½ tsp cinnamon

·      ¼ cup mini dark chocolate chips

1)          Preheat oven to 350 degrees.  Spray a non-stick cookie shit with cooking spray {I use coconut oil spray from Trader Joe’s}.

2)         Mash banana in a large bowl with a fork, then add pumpkin and mix.

3)         Add remaining ingredients and mix well.  Place tablespoon sized heaps on cookie sheet.

4)         Bake 15 minutes, cool and enjoy!
